Grilled Chicken Skewers with Coconut Rice and Avocado-Cucumber Salad

Description

Delicious grilled chicken skewers served with coconut rice and refreshing avocado-cucumber salad.


Ingredients

Scale
  • 1 pound boneless skinless chicken thighs
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon pepper
  • 1 teaspoon cornstarch
  • 1 tablespoon olive oil
  • 1/4 cup mayo
  • 2 tablespoons sweet chili sauce
  • 1/2 teaspoon garlic powder
  • 1 teaspoon soy sauce
  • 1 batch coconut rice (or plain rice)
  • 1 batch avocado-cucumber salad (see note 1)
  • 1 lime (optional)

Instructions

  1. Start with the rice. Follow directions for coconut rice or plain rice.
  2. Adjust the oven rack to 6 inches below the broiler. Preheat the broiler to high. Line a sheet pan with foil.
  3. Trim excess fat from the chicken and cut it into 1-inch pieces. Pat dry with paper towels.
  4. In a large bowl, combine chicken, paprika, garlic powder, salt, onion powder, pepper, and cornstarch. Toss with tongs to coat evenly. Drizzle olive oil over the chicken and toss again to coat.
  5. Thread chicken onto skewers and space them apart on the prepared sheet pan. Broil for 12 minutes, or until the chicken reaches an internal temperature of 160°F and is golden brown. Remove from the oven, taste, and add a pinch of salt if needed.
  6. Sauce: Whisk together mayo, sweet chili sauce, garlic powder, and soy sauce in a small bowl until smooth.
  7. Salad: If desired, whip together cucumber-avocado salad found in note 1.
  8. Divide the cooked rice evenly among 4 bowls. Top each bowl with chicken skewers and cucumber salad (if using). Drizzle or brush sauce over the chicken and serve promptly.

  • For the avocado-cucumber salad, use fresh ingredients as per your preference.
