Description

Deliciously spiced pumpkin cookies that are soft and perfect for fall.


Ingredients

  • 1 cup pumpkin purée
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1 and 3/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon allspice

Instructions

  1. In a large bowl, cream together butter, brown sugar, and granulated sugar until fluffy.
  2. Add in pumpkin purée, egg yolk, and vanilla extract. Mix until smooth.
  3. In a separate bowl, whisk together flour, baking soda, salt, and all the spices.
  4. Gradually mix the dry ingredients into the wet ingredients until just combined.
  5. Cover and chill the dough for at least 30 minutes.
  6. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Scoop tablespoon-sized dough balls onto the baking sheet.
  8. Bake for 10–12 minutes until edges are set and centers are soft.
  9. Cool on baking sheet for 5 minutes before transferring to a wire rack.
  10. Serve warm or store in an airtight container.

  • These cookies can be stored in an airtight container for up to a week.
  • For an extra touch, sprinkle some powdered sugar on top before serving.
