Description

A delicious creamy mushroom sauce over tender chicken breasts.


Ingredients

  • 4 boneless, skinless chicken breasts (about 1 lbs)
  • 2 cups sliced mushrooms (button or cremini)
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 3 cloves minced garlic
  • 1 medium onion, finely chopped
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 teaspoon dried thyme
  • to taste salt and pepper
  • optional Parmesan cheese, for topping

Instructions

  1. Season the chicken breasts generously with salt and pepper on both sides.
  2. In a large skillet over medium-high heat, heat the olive oil and one tablespoon of butter.
  3. Add the chicken breasts and cook for about 5-7 minutes per side until golden brown and cooked through. Remove them from the skillet and set aside.
  4. In the same skillet, add another tablespoon of butter. Once melted, toss in the chopped onions and sauté for about 3-4 minutes until they soften.
  5. Add the minced garlic and cook for another minute, until fragrant.
  6. Now, add the sliced mushrooms to the skillet and cook for about 5-7 minutes until they are tender and browned.
  7. Pour in the chicken broth and season with additional salt and pepper as needed.
  8. Return the chicken breasts to the skillet, coating them well with the creamy mushroom sauce. Let it simmer on low for another 3-5 minutes.
  9. Serve hot, optionally topped with some grated Parmesan cheese and fresh herbs.
