Description

A comforting and creamy beef noodle casserole with mushrooms and herbs.


Ingredients

  • 1 lb lean ground beef
  • 12 oz egg noodles
  • 8 oz fresh mushrooms, sliced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 1 cup sour cream
  • 2 tsp paprika (smoked or regular)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Brown the ground beef in a large pot over medium heat until no longer pink.
  2. Add diced onion and minced garlic; cook until the onion is translucent (about 3 minutes).
  3. Stir in sliced mushrooms and cook for another 5 minutes until softened.
  4. Pour in beef broth and add egg noodles. Bring to a boil, then reduce heat and simmer for about 10 minutes until noodles are tender.
  5. Stir in sour cream and paprika until well combined and creamy.
  6. Garnish with fresh parsley before serving hot.
