A comforting and creamy beef noodle casserole with mushrooms and herbs.

- 1 lb lean ground beef
- 12 oz egg noodles
- 8 oz fresh mushrooms, sliced
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups low-sodium beef broth
- 1 cup sour cream
- 2 tsp paprika (smoked or regular)
- Fresh parsley, chopped (for garnish)
Instructions
- Brown the ground beef in a large pot over medium heat until no longer pink.
- Add diced onion and minced garlic; cook until the onion is translucent (about 3 minutes).
- Stir in sliced mushrooms and cook for another 5 minutes until softened.
- Pour in beef broth and add egg noodles. Bring to a boil, then reduce heat and simmer for about 10 minutes until noodles are tender.
- Stir in sour cream and paprika until well combined and creamy.
- Garnish with fresh parsley before serving hot.
