Description

A delicious twist on classic French toast with the flavors of pumpkin and spices.


Ingredients

  • 1 cup pumpkin puree
  • 3 large eggs
  • 1 cup milk or half & half
  • 1 teaspoon vanilla extract
  • 1 tablespoon brown sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 6 slices brioche or challah bread
  • 2 tablespoons butter (for frying)
  • Maple syrup, whipped cream, powdered sugar, caramelized apples, or pecans (for topping)

Instructions

  1. In a mixing bowl, whisk together the pumpkin puree, eggs, milk, vanilla extract, brown sugar, cinnamon, and nutmeg until smooth.
  2. Dip each slice of bread into the custard, letting it soak for 20–30 seconds per side.
  3. Heat a skillet over medium heat and melt a bit of butter.
  4. Cook each slice for 3–4 minutes per side until golden and crispy.
  5. Plate and top with syrup, whipped cream, or your favorite fall toppings. Serve warm.
