- 3 large eggs
- 1 cup milk or half & half
- 1 teaspoon vanilla extract
- 1 tablespoon brown sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 6 slices brioche or challah bread
- 2 tablespoons butter (for frying)
- Maple syrup, whipped cream, powdered sugar, caramelized apples, or pecans (for topping)
Instructions
- In a mixing bowl, whisk together the pumpkin puree, eggs, milk, vanilla extract, brown sugar, cinnamon, and nutmeg until smooth.
- Dip each slice of bread into the custard, letting it soak for 20–30 seconds per side.
- Heat a skillet over medium heat and melt a bit of butter.
- Cook each slice for 3–4 minutes per side until golden and crispy.
- Plate and top with syrup, whipped cream, or your favorite fall toppings. Serve warm.
Notes
- This recipe is a great way to use leftover pumpkin puree.
- For a richer flavor, consider using heavy cream instead of milk.
