Ingredients

  • 1/4 cup unsalted butter (melted, or coconut oil for dairy-free)
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two round 9-inch cake pans.
  2. In a bowl, whisk together gluten-free flour, sugar, baking powder, and salt.
  3. In another bowl, beat eggs until frothy; add milk, melted butter, and vanilla extract. Mix well.
  4. Combine wet and dry ingredients gently with a spatula until just mixed—avoid over-mixing.
  5. Divide the batter evenly into prepared pans and smooth the tops.
  6. Bake for 25-30 minutes or until golden brown and springy to touch.
  7. Cool slightly on wire racks before serving.

Notes

  • Can substitute almond or oat milk for whole milk for a dairy-free version.
  • Use coconut oil as a dairy-free substitute for butter.
