Description

A delicious creamy pasta dish with chicken, spinach, and Parmesan cheese.


Ingredients

  • 34 boneless, skinless chicken breasts
  • 8 oz fettuccine or penne pasta
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 cups fresh spinach
  • 4 cloves garlic, minced
  • 1 tsp dried Italian herbs (oregano and basil)
  • 2 tbsp olive oil
  • to taste Salt and pepper

Instructions

  1. Prepare your ingredients by dicing the garlic and grating the Parmesan cheese.
  2. In a large skillet, heat olive oil over medium heat. Season chicken with salt and pepper, then cook for 5-7 minutes per side until golden brown and cooked through. Remove from skillet.
  3. In the same pan, sauté minced garlic and dried herbs until fragrant (about 30 seconds).
  4. Stir in heavy cream and scrape up any bits from the pan. Add grated Parmesan cheese until melted and combined.
  5. Add fresh spinach to wilt before tossing in cooked pasta, ensuring every noodle is coated in sauce.
  6. Slice the chicken into strips and combine it back into the pasta mixture before serving hot.

Notes

  • This dish can be served with additional grated Parmesan on top.
