- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- Zest of 1 lemon
- 2 tablespoons fresh lemon juice
- 1/2 cup cream cheese, softened
- 1 cup blueberries, fresh or frozen (if using frozen, do not thaw)
- Powdered sugar, for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper and set aside.
- In a medium bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt. Set aside.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
- Add the egg, vanilla extract, lemon zest, and lemon juice to the butter and sugar mixture. Beat until well combined.
- Gently mix in the softened cream cheese until the batter is smooth.
- Gradually add the dry ingredients from the medium bowl to the wet ingredients in the large bowl. Mix until just combined; do not overmix.
- Carefully fold in the blueberries, ensuring they are evenly distributed throughout the dough.
- Drop tablespoon-sized portions of dough onto the prepared baking sheet, leaving space between each cookie as they will spread while baking.
- Bake in the preheated oven for 10-12 minutes, or until the edges of the cookies are lightly golden but the centers are still soft.
- Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
- Once cooled, dust with powdered sugar if desired.
Notes
- Make sure to measure the flour accurately for the best results.
- For extra lemon flavor, you can add more lemon zest.
