- 1 pound fresh or frozen shrimp
- 1 cup orzo
- 2 cups fresh spinach
- 4 cloves fresh garlic, minced
- 1 tablespoon fresh lemon juice
- 3 tablespoons olive oil
- 1/2 cup grated Parmesan cheese
Instructions
- In a large pot, bring salted water to a boil. Add the orzo and cook according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
- Increase the heat to medium-high and add the shrimp to the skillet. Season with salt and pepper, and cook for 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
- In the same skillet, add another tablespoon of olive oil if needed, and toss in the fresh spinach. Sauté for 2-3 minutes until wilted.
- Return the cooked shrimp to the skillet with the spinach. Add the cooked orzo and the juice of one lemon. Toss everything together gently to combine.
- Remove from heat, sprinkle with grated Parmesan cheese, and garnish with fresh lemon slices and chopped parsley if desired. Enjoy your meal!
