Description

A delicious shrimp and orzo dish with fresh spinach and garlic, topped with Parmesan cheese for a savory flavor.


Ingredients

  • 1 pound fresh or frozen shrimp
  • 1 cup orzo
  • 2 cups fresh spinach
  • 4 cloves fresh garlic, minced
  • 1 tablespoon fresh lemon juice
  • 3 tablespoons olive oil
  • 1/2 cup grated Parmesan cheese

Instructions

  1. In a large pot, bring salted water to a boil. Add the orzo and cook according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  3. Increase the heat to medium-high and add the shrimp to the skillet. Season with salt and pepper, and cook for 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  4. In the same skillet, add another tablespoon of olive oil if needed, and toss in the fresh spinach. Sauté for 2-3 minutes until wilted.
  5. Return the cooked shrimp to the skillet with the spinach. Add the cooked orzo and the juice of one lemon. Toss everything together gently to combine.
  6. Remove from heat, sprinkle with grated Parmesan cheese, and garnish with fresh lemon slices and chopped parsley if desired. Enjoy your meal!
