These almond butter energy bites are a perfect snack for any time of the day!
Ingredients

- 2 cups rolled oats
- 1 cup almond butter
- 1/2 cup honey or maple syrup
- 1 tsp vanilla extract
- 1 tbsp chia seeds
- 2 tsp cinnamon
- 1 tbsp sugar (for rolling)
Instructions
- In a large bowl, mix rolled oats, almond butter, honey or maple syrup, vanilla extract, chia seeds, and 1 teaspoon of cinnamon. Stir until well combined.
- If the mixture is too sticky, chill for 20 minutes to firm up.
- Wet your hands slightly to prevent sticking while rolling. Roll the mixture into 1-inch balls.
- In a small bowl, mix the remaining 1 teaspoon of cinnamon and 1 tablespoon of sugar.
- Lightly roll each ball in the cinnamon-sugar mixture until evenly coated.
- Store the finished bites in an airtight container in the refrigerator.
