Description

This delicious garlic butter sirloin steak with crispy baby potatoes is a perfect hearty meal that can be prepared quickly and easily.


Ingredients

  • 1 lbs (680g) sirloin steak, cut into 1-inch cubes
  • 1 lbs (680g) baby potatoes, quartered
  • 3 tbsp (45ml) olive oil
  • 3 tbsp (42g) butter, unsalted preferred
  • 4 cloves garlic, minced
  • 1 tbsp (3g) fresh thyme, chopped
  • 1 tsp (1g) fresh rosemary, chopped
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Par-boil the quartered baby potatoes in a large pot of salted water for 5–8 minutes, until slightly tender. Drain thoroughly and set aside.
  2. Heat the olive oil in a large skillet or cast-iron pan over high heat until shimmering.
  3. Sear the sirloin steak bites in batches, if necessary, cooking for 2–3 minutes per side until nicely browned and a crust forms. Remove the seared steak bites from the pan and set aside.
  4. Add the drained potatoes to the same skillet and fry over medium-high heat, tossing occasionally, until crispy and golden brown on all sides.
  5. Reduce the heat to medium-low. Add the butter, minced garlic, fresh thyme, and rosemary to the pan with the crispy potatoes. Sauté for about 1 minute, stirring constantly, until the garlic becomes fragrant and the butter is fully melted and infused.
  6. Return the seared steak bites to the pan. Gently toss everything together, ensuring the beef and potatoes are evenly coated in the garlic butter sauce. Season with salt and pepper to taste.
  7. Garnish generously with fresh parsley and serve hot immediately.
