- 2 (6-ounce) salmon fillets, skin on or off
- 1 tablespoon olive oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika (optional)
- 1 tablespoon unsalted butter
- 3 cloves garlic, minced
- 4 cups fresh baby spinach
- 1/2 cup heavy cream (or half-and-half for lighter version)
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon salt (or to taste)
- 1/8 teaspoon black pepper
- 1/8 teaspoon ground nutmeg (optional but recommended)
- Lemon wedges, for serving
Instructions
- Pat salmon fillets completely dry with paper towels. Season both sides with salt, pepper, and paprika if using.
- Heat olive oil in a large skillet over medium-high heat. Once hot, add salmon fillets skin-side down (if skin-on).
- Cook for 4-6 minutes per side, or until the salmon is golden and cooked to your desired doneness (internal temperature of 145°F).
- Transfer salmon to a plate and tent loosely with foil.
- Reduce heat to medium. Add butter to the same skillet. Once melted, add minced garlic and sauté for about 30 seconds until fragrant.
- Add the fresh spinach in batches, stirring until wilted.
- Pour in the heavy cream and bring to a gentle simmer.
- Stir in the grated Parmesan cheese, salt, pepper, and nutmeg. Let the sauce simmer for 2-3 minutes until slightly thickened and creamy.
- Return the salmon to the skillet, nestling it into the sauce, or plate the salmon and spoon the sauce generously over the top.
- Serve immediately with lemon wedges on the side.

- For a lighter version, substitute heavy cream with half-and-half.
