Chocolate Dipped Peanut Butter Ritz Cookies

Description

These delightful chocolate-dipped peanut butter Ritz cookies are perfect for the holidays and make a great treat for any festive gathering!


Ingredients

Scale
  • 1 cup creamy peanut butter (such as Jif or Skippy)
  • 60 Ritz crackers
  • 12 oz. Wilton red candy melts
  • 12 oz. Wilton vanilla candy melts (or Ghirardelli vanilla melting wafers)
  • sprinkles (red, green, and white holiday sprinkles)
  • 15 Rolo candies (unwrapped)
  • 15 mini Reese’s peanut butter cups (unwrapped)

Instructions

  1. Line a large baking sheet with parchment paper.
  2. Spread 2 teaspoons of peanut butter onto 30 of the crackers; sandwich those together with the remaining 30 crackers.
  3. Melt the red candy melts according to package directions until melted and smooth.
  4. Place formed cookie stacks on a fork and dip in the red melted chocolate to coat; gently tap the fork on the edge of the bowl to allow any excess chocolate to drip off. Transfer back to the prepared baking sheet and allow to set.
  5. Using the leftover melted chocolate, attach a Rolo and mini Reese’s peanut butter cups to the tops of the ornaments. Let set.
  6. Melt the white vanilla candy melts according to package directions. Transfer to a piping bag (or plastic bag and snip off a corner.) Drizzle over the red cookies. Top with some holiday sprinkles before the chocolate sets.
  7. Allow to fully harden at room temperature, or place the baking sheet in the fridge to set faster (about 10 to 15 minutes).
  8. Serve and enjoy!
