- 1 small head cabbage, chopped
- 4 large carrots, sliced
- 1 onion, diced
- 3 cups beef broth
- 1 (14 oz) can diced tomatoes

- Salt and pepper to taste
Instructions
- Place the cubed beef, chopped cabbage, sliced carrots, diced onion, and minced garlic in the slow cooker.
- Pour in the beef broth and diced tomatoes (undrained).
- Stir in the dried thyme, salt, and pepper, ensuring all ingredients are well-combined.
- Cover and cook on low for 7-8 hours or on high for 4 hours until the beef is incredibly tender and the vegetables are softened.
- Stir well before serving the hearty stew in deep bowls.
