This delicious crock pot chicken curry is easy to prepare and perfect for a comforting meal. With tender chicken, vegetables, and a rich coconut curry sauce, it’s sure to please!

- 1 1/2 pound chicken breasts (diced into 1 inch pieces)
- 1 pound Russet Potatoes (peeled and diced into 1 inch pieces)
- 2 carrots (peeled and diced)
- 2 tablespoons yellow curry powder
- 1 can full fat coconut milk (14 oz)
- 1 fresh lime (juiced)
- 1 tablespoon minced garlic
- 1/2 cup chicken broth
- 1/2 teaspoon ground ginger
- 2 tablespoons brown sugar
- 1 teaspoon salt
- 2 tablespoons cornstarch
Instructions
- Add all the ingredients to a crock pot.
- Stir to thoroughly combine all the ingredients.
- Cook on low for 4-5 hours.
- Serve as is or over rice and enjoy!
