- 240 g all-purpose flour
- 1 tsp baking soda

- ½ tsp salt
- 2 tsp ground cinnamon
- ½ tsp ground nutmeg
- 115 g unsalted butter, softened
- 200 g granulated sugar
- 160 g pumpkin puree
- 1 large egg
- 1 tsp vanilla extract
- 60 g unsalted butter, softened (for frosting)
- 120 g powdered sugar
- 1 tsp ground cinnamon (for frosting)
- 1–2 tbsp milk
Instructions
- Preheat oven: 175°C / 350°F. Line baking sheets with parchment paper.
- Mix dry ingredients: In a bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Cream butter and sugar: In a large bowl, beat butter and sugar until fluffy.
- Add wet ingredients: Mix in pumpkin puree, egg, and vanilla until combined.
- Combine: Gradually add dry ingredients to wet, mixing until just combined.
- Scoop cookies: Drop dough by rounded tablespoons onto baking sheets. Flatten slightly.
- Bake: 10–12 minutes or until edges are lightly golden. Cool 10 minutes on sheet, then transfer to wire rack.
- Make frosting: Beat butter, powdered sugar, cinnamon, and milk until smooth. Adjust consistency as needed.
- Frost cookies: Spread cinnamon frosting on cooled cookies. Serve or store in an airtight container.

- For a thicker frosting, reduce the amount of milk.
