Delicious apple cinnamon cookies that are perfect for fall.

- 1 cup finely diced baking apples
- 2 tbsp unsalted butter
- 2 tbsp packed light brown sugar
- 1/2 tsp ground cinnamon (for filling)
- 1/4 tsp ground nutmeg
- Pinch of ground cloves
- 1 tbsp water or apple cider
- 1/2 tsp cornstarch
- 1 tsp cold water (for slurry)
- 2 3/4 cups all-purpose flour, spooned and leveled
- 2 tsp cream of tartar
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup (2 sticks) unsalted butter, softened
- 1 1/2 cups granulated sugar
- 2 large eggs, room temperature
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon (for dough)
- 1/2 cup granulated sugar (for coating)
- 2 tbsp ground cinnamon (for coating)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix the diced apples with the unsalted butter, brown sugar, ground cinnamon, nutmeg, ground cloves, water or apple cider, cornstarch, and cold water to form the filling.
- In a separate bowl, whisk together the flour, cream of tartar, baking soda, and salt.
- In another bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Gradually blend in the dry ingredients into the wet until just combined. Fold in apple filling.
- Roll the dough into balls and coat with sugar and cinnamon mixture.
- Place on a baking sheet lined with parchment paper and bake for 12-15 minutes.
