Description

Delicious apple cinnamon cookies that are perfect for fall.


Ingredients

  • 1 cup finely diced baking apples
  • 2 tbsp unsalted butter
  • 2 tbsp packed light brown sugar
  • 1/2 tsp ground cinnamon (for filling)
  • 1/4 tsp ground nutmeg
  • Pinch of ground cloves
  • 1 tbsp water or apple cider
  • 1/2 tsp cornstarch
  • 1 tsp cold water (for slurry)
  • 2 3/4 cups all-purpose flour, spooned and leveled
  • 2 tsp cream of tartar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon (for dough)
  • 1/2 cup granulated sugar (for coating)
  • 2 tbsp ground cinnamon (for coating)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the diced apples with the unsalted butter, brown sugar, ground cinnamon, nutmeg, ground cloves, water or apple cider, cornstarch, and cold water to form the filling.
  3. In a separate bowl, whisk together the flour, cream of tartar, baking soda, and salt.
  4. In another bowl, cream together the softened butter and granulated sugar until light and fluffy.
  5. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  6. Gradually blend in the dry ingredients into the wet until just combined. Fold in apple filling.
  7. Roll the dough into balls and coat with sugar and cinnamon mixture.
  8. Place on a baking sheet lined with parchment paper and bake for 12-15 minutes.
