- 4 boneless skinless chicken breasts
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 2 tablespoons olive oil
- 1 large onion, thinly sliced
- 8 ounces mushrooms, sliced
- 1/2 cup chicken broth
- 1 cup shredded Colby Jack or Monterey Jack cheese
Instructions
- Season chicken breasts with salt, pepper, garlic powder, and paprika.
- Heat olive oil in a skillet over medium-high heat and sear chicken for 5–6 minutes per side until cooked through.
- Remove chicken and set aside. In the same skillet, sauté onions and mushrooms until tender and lightly caramelized.
- Add chicken broth to deglaze the pan, scraping up browned bits.
- Return chicken to skillet and top with sautéed vegetables.
- Sprinkle cheese over each chicken breast, cover skillet, and cook on low until cheese melts.
- Serve hot, spooning extra pan juices over each serving.
