Instructions
- Prepare your ingredients: Dice the potatoes, onion, and bell pepper. Slice the sausage and mince the garlic. This should take about 10 minutes. Prepping everything ahead of time ensures a smooth cooking process.
- Cook the potatoes: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced potatoes and season with salt and black pepper. Cook for about 10-12 minutes, stirring occasionally, until they are golden brown and fork-tender. Avoid overcrowding the pan to prevent steaming.
- Add the sausage: Push the potatoes to the side of the skillet and add the sliced Cajun sausage. Cook for about 5 minutes, allowing it to brown and release its flavorful oils. Make sure to stir occasionally for even cooking.
