Delicious and colorful cream cheese tortilla pinwheels filled with fresh vegetables and cherries.

- 4 large flour tortillas
- 1 cup cream cheese (softened)
- 1 cup cherry tomatoes (halved)
- 1 cup red bell pepper (finely chopped)
- 1 cup cucumber (finely chopped)
- 1 cup fresh spinach (chopped)
- 1/2 cup cherries (pitted and chopped)
- 1 teaspoon lime juice
- 1 teaspoon salt (to taste)
- 1 teaspoon black pepper (to taste)
Instructions
- In a mixing bowl, combine the softened cream cheese, lime juice, salt, and black pepper. Mix until smooth.
- Add the cherry tomatoes, red bell pepper, cucumber, spinach, and chopped cherries to the cream cheese mixture. Stir until well combined.
- Lay a flour tortilla on a cutting board. Spread a generous layer of the filling over the entire tortilla.
- Starting from one edge, roll the tortilla tightly to form a log. Repeat with the remaining tortillas and filling.
- Wrap each log in plastic wrap and refrigerate for at least 30 minutes to firm up.
- Once chilled, remove from the refrigerator and slice into 1-inch pinwheels. Serve immediately.
Notes
- These pinwheels can be made ahead of time and stored in the refrigerator for a quick snack or appetizer.
