Description

Delicious and colorful cream cheese tortilla pinwheels filled with fresh vegetables and cherries.


Ingredients

  • 4 large flour tortillas
  • 1 cup cream cheese (softened)
  • 1 cup cherry tomatoes (halved)
  • 1 cup red bell pepper (finely chopped)
  • 1 cup cucumber (finely chopped)
  • 1 cup fresh spinach (chopped)
  • 1/2 cup cherries (pitted and chopped)
  • 1 teaspoon lime juice
  • 1 teaspoon salt (to taste)
  • 1 teaspoon black pepper (to taste)

Instructions

  1. In a mixing bowl, combine the softened cream cheese, lime juice, salt, and black pepper. Mix until smooth.
  2. Add the cherry tomatoes, red bell pepper, cucumber, spinach, and chopped cherries to the cream cheese mixture. Stir until well combined.
  3. Lay a flour tortilla on a cutting board. Spread a generous layer of the filling over the entire tortilla.
  4. Starting from one edge, roll the tortilla tightly to form a log. Repeat with the remaining tortillas and filling.
  5. Wrap each log in plastic wrap and refrigerate for at least 30 minutes to firm up.
  6. Once chilled, remove from the refrigerator and slice into 1-inch pinwheels. Serve immediately.
