- 1 cup shredded mozzarella cheese
- 12 dill pickle chips (sliced rounds)
- 1 teaspoon garlic powder
- ½ teaspoon smoked paprika
- ½ teaspoon black pepper

- Preheat and Prep: Start by preheating your oven to 375°F (190°C). Line a baking sheet with parchment paper to keep things from sticking — this also makes cleanup a breeze.
- Cheese Base: In a bowl, mix together the shredded cheddar and mozzarella. You can use just one type of cheese if that’s what you have, but the blend gives a nice balance of meltiness and sharpness.
- Seasoning: Sprinkle in the garlic powder, smoked paprika, and black pepper. Mix everything well so the spices are evenly distributed through the cheese.
- Form the Bites: Scoop about 1 tablespoon of the cheese mixture onto the parchment paper and gently flatten it into small circles. Space them out — they’ll spread a bit while baking.
- Add Pickles: Place one dill pickle chip in the center of each cheese mound. Press it down slightly so it nests into the cheese.
- Bake to Perfection: Slide the tray into the oven and bake for 10–12 minutes, or until the edges are bubbling and golden brown. Keep an eye on them — cheese goes from golden to burnt quickly.
- Cool and Crisp: Let the bites cool for a few minutes on the tray. As they cool, they’ll firm up and get that signature crunch around the edges.
