A delicious and quick chicken stir-fry dish packed with flavor.


Ingredients

  • 1/4 cup low sodium soy sauce
  • 2 cloves garlic, minced
  • 2 teaspoons minced ginger
  • 2 teaspoons sesame oil
  • 1/4 cup water
  • 1/3 cup low sodium chicken broth
  • 2 tablespoons cornstarch
  • 2 tablespoons sesame oil
  • 3 cloves garlic, minced
  • 2 teaspoons minced ginger
  • 1 onion, cut into 1 inch chunks
  • 1 lb chicken breast, thinly sliced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 yellow/orange bell pepper, sliced thinly
  • 1 red bell pepper, sliced thinly
  • 6 ounces broccoli florets

Instructions

  1. In a small bowl or measuring cup add all sauce ingredients. Whisk together until cornstarch is dissolved.
  2. In a large skillet add sesame oil. Once hot add ginger and garlic. Saute for one minute until fragrant.
  3. Add in onion. Saute for 2-3 minutes until softened.
  4. Add in chicken, salt, and pepper. Cook for 5-6 minutes, until no longer pink, tossing occasionally.
  5. Add in red bell pepper, yellow bell pepper, and broccoli. Saute for 3-4 minutes.
  6. Add in sauce, cooking for 1-2 minutes, until thickened.
  7. Serve with minced green onion, sesame seeds, and rice.

Notes

  • This stir-fry is versatile; feel free to add other vegetables.
  • For a gluten-free option, use tamari instead of soy sauce.
