- 8 ounces spaghetti or linguine
- 1 pound large shrimp, peeled and deveined
- 4 tablespoons unsalted butter
- 3 cloves garlic, minced
- Zest and juice of 1 lemon
- ¼ cup fresh parsley, chopped
- Salt and pepper, to taste
- Grated Parmesan cheese, for serving (optional)
Instructions
- Bring a large pot of salted water to a boil.
- Add the spaghetti or linguine and cook according to package instructions until al dente. Drain and set aside.
- In a large skillet over medium heat, melt 2 tablespoons of butter.
- Add the minced garlic and cook for 30 seconds or until fragrant.
- Season the shrimp with salt and pepper, then add them to the skillet.
- Cook for 2-3 minutes on each side until the shrimp turn pink and opaque.
- Once the shrimp are cooked, add the remaining butter and lemon zest.
- Pour in the lemon juice and toss everything gently to combine.
- Add the cooked pasta to the skillet and gently toss to coat the pasta in the lemon butter sauce and shrimp.
- Stir in the chopped parsley, adjusting seasoning if needed.
- Plate the pasta and garnish with extra parsley and grated Parmesan cheese if desired.
