- 1 pound Boneless, skinless chicken thighs or breasts (for tender chicken)
- 2 inches Fresh ginger (minced finely)
- 3–4 cloves Garlic (minced)
- 2 tablespoons Soy sauce (for savory depth)
- 8 ounces Dried noodles (egg noodles or your favorite quick-cooking variety)
- 2 scallions (Chopped for garnish)
- 1 teaspoon Sesame oil (for finishing)
Instructions
- Finely mince your fresh ginger and garlic. Gently sauté them in your soup pot for about a minute until fragrant, but don’t let them brown.
- Add chicken broth and chicken pieces to the pot. Simmer gently until the chicken is cooked through, about 10-15 minutes.
- Stir in soy sauce. Let the broth simmer for another 5 minutes to meld those wonderful ginger and garlic notes.
- Add your chosen noodles directly to the simmering broth during the last few minutes of cooking, ensuring they reach your desired tenderness.
- Stir in chopped scallions and a drizzle of sesame oil. Taste and adjust seasoning if needed before ladling into bowls.

- This soup is easy to customize; feel free to add vegetables like carrots or spinach.
