Description
This Mediterranean Pasta Salad is a refreshing and easy dish perfect for gatherings or a quick lunch!
Ingredients

- 12 ounces medium pasta (uncooked, farfalle or penne)
- 2 tomatoes (diced)
- 1 cucumber (diced)
- 4 ounces medium shrimp (canned or frozen)
- 2 green onions (sliced)
- ¼ cup feta cheese
- 2 tablespoons sliced black olives (or kalamata olives)
- ½ cup Greek dressing (bottled)
- ½ cup mayonnaise
Instructions
- Bring salted water to a boil, add pasta and cook according to package directions.
- While pasta is cooking, chop the vegetables. Set aside.
- Once pasta is cooked al dente, drain and rinse under cold water.
- Combine all ingredients in a bowl and mix well. Season with salt & pepper to taste.
- Refrigerate for at least one hour.
- Garnish with additional feta cheese if desired.
Notes
- Feel free to add other vegetables like bell peppers or spinach for extra flavor.
- This salad can be made a day in advance for better flavor fusion.
