Description

This Mediterranean Pasta Salad is a refreshing and easy dish perfect for gatherings or a quick lunch!


Ingredients

Scale
  • 12 ounces medium pasta (uncooked, farfalle or penne)
  • 2 tomatoes (diced)
  • 1 cucumber (diced)
  • 4 ounces medium shrimp (canned or frozen)
  • 2 green onions (sliced)
  • ¼ cup feta cheese
  • 2 tablespoons sliced black olives (or kalamata olives)
  • ½ cup Greek dressing (bottled)
  • ½ cup mayonnaise

Instructions

  1. Bring salted water to a boil, add pasta and cook according to package directions.
  2. While pasta is cooking, chop the vegetables. Set aside.
  3. Once pasta is cooked al dente, drain and rinse under cold water.
  4. Combine all ingredients in a bowl and mix well. Season with salt & pepper to taste.
  5. Refrigerate for at least one hour.
  6. Garnish with additional feta cheese if desired.

Notes

  • Feel free to add other vegetables like bell peppers or spinach for extra flavor.
  • This salad can be made a day in advance for better flavor fusion.
