Description

A delicious and easy banana butter cake recipe topped with a caramelized brown sugar and banana layer.


Ingredients

  • 3 tablespoons brown sugar
  • 1 medium banana (sliced)
  • 2 tablespoons salted butter (softened to room temperature)
  • 6 tablespoons sugar
  • 1 large egg
  • ⅛ teaspoon vanilla extract
  • 6 tablespoons all purpose flour
  • ⅛ teaspoon baking powder
  • ⅛ teaspoon salt
  • 2 tablespoons milk

Instructions

  1. Heat the oven to 350°F (177°C). Grease the baking dish with butter and place it on a rimmed baking sheet.
  2. In a small bowl, stir the melted butter and brown sugar together until combined.
  3. Spread the brown sugar mixture evenly across the bottom of the baking dish.
  4. Slice the banana into 1/4-inch rounds and arrange them in a single layer over the brown sugar mixture.
  5. In a medium bowl, beat the softened butter and sugar with a hand mixer on low speed until light and fluffy.
  6. Beat in the egg and vanilla until well combined.
  7. In a separate small bowl, whisk together the flour, baking powder, and salt.
  8. Add the dry ingredients to the butter mixture and stir until just combined.
  9. Stir in the milk until the batter is smooth. Do not overmix.
  10. Pour the batter over the bananas and spread evenly with a spatula.
  11. Bake for 40 to 45 minutes, until the top is golden brown and a toothpick inserted in the center comes out clean.
  12. Let cool in the pan for 10 minutes. Run a knife around the edges, place a plate upside down over the dish, and flip in one motion. Lift the dish off carefully.
  13. Serve warm.
