A tasty quesadilla recipe filled with cheese, cream cheese, and onion ring chips.

- 4 large (10-inch) Flour Tortillas
- 2 cups (cheddar, Monterey Jack, or a blend) Shredded Cheese
- 1 cup (store-bought or homemade, crushed) Onion Ring Chips
- 4 oz (softened) Cream Cheese
- ½ cup Sour Cream
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- ½ tsp Salt (to taste)
- ¼ tsp Black Pepper (to taste)
- Olive Oil or Cooking Spray (for grilling)
- Fresh Chives or Green Onions (optional, for garnish)
Instructions
- In a medium bowl, combine the softened cream cheese, sour cream, garlic powder, onion powder, salt, and black pepper. Mix well until smooth and creamy, about 2 minutes.
- Lay out your flour tortillas on a clean surface. Spread a generous layer of the cheese mixture onto half of each tortilla. Sprinkle ½ cup of shredded cheese on top, followed by ¼ cup of crushed onion ring chips. Fold the tortillas over to create a half-moon shape.
- In a large skillet, heat a drizzle of olive oil or spray with cooking spray over medium heat. Allow it to heat for about 2 minutes until shimmering but not smoking.
- Place the folded quesadillas in the skillet, cooking for about 4-5 minutes on one side until golden brown. Carefully flip them over using a spatula, and cook for another 4-5 minutes on the other side until the cheese is melted and the tortillas are crispy.
- Remove the quesadillas from the skillet and let them cool for 1-2 minutes. Slice each quesadilla into wedges and serve warm, garnished with chopped chives or green onions if desired.
Notes
- Adjust seasoning according to personal preference.
- For extra crunch, add more onion ring chips.
