Description
A delicious roasted salmon recipe featuring citrus flavors.
Ingredients
Scale
- 1 side of salmon (about 1 to 1.5 kg)
- 2 oranges, thinly sliced
- 1 lemon, thinly sliced
- 3 tablespoons olive oil
- 2 tablespoons capers, rinsed
- 1 small red onion, sliced into half moons
- flaky sea salt to taste
- freshly ground black pepper to taste
- a few sprigs fresh dill (optional)
Instructions
- Preheat your oven to 130°C (about 265°F).
- Line a baking tray with baking parchment.
- Lay the salmon skin-side down on the tray. Pat it dry with a bit of kitchen roll.
- Layer the orange and lemon slices over the salmon. Scatter the sliced red onion and sprinkled capers on top.
- Drizzle the olive oil all over the salmon. Sprinkle generously with flaky salt, black pepper, and dill if using.
- Pop the tray into the oven and roast for 35-45 minutes, until the salmon is just opaque and flakes easily with a fork.
- Take the salmon out and let it rest for about 5 minutes before serving.
Notes
- Mandarins can be used instead of oranges if needed.
- Limes can replace lemon if you prefer a punchier flavor.
- Salt-packed capers can also be used instead of the brined kind.
