Description

Delicious strawberry crumble bars with a creamy glaze, perfect for dessert or a snack.

Ingredients

Scale
  • 2 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ teaspoon salt
  • 1 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 3 cups fresh strawberries, chopped
  • ⅓ cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 4 oz cream cheese, softened
  • 1 cup powdered sugar
  • 23 tablespoons milk
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper, leaving overhang on the sides to lift the bars out easily after baking.
  2. Combine flour, granulated sugar, and salt in a large bowl. Add melted butter and vanilla extract, then mix until a soft dough forms with no dry spots remaining.
  3. Transfer two-thirds of the dough into the prepared pan and press it firmly into an even layer to create a stable crust.
  4. Place chopped strawberries in a bowl and add sugar, cornstarch, lemon juice, and vanilla extract. Stir gently until the strawberries are evenly coated and the mixture begins to look slightly glossy.
  5. Spread the strawberry mixture evenly over the crust, ensuring the fruit is distributed across the entire surface for consistent flavor in each bar.
  6. Break the remaining dough into small pieces and scatter it over the strawberry layer without pressing, allowing gaps for the filling to show through.
  7. Bake for 40–45 minutes until the top is lightly golden and the strawberry filling is bubbling around the edges.
  8. Remove the pan from the oven and allow the bars to cool fully at room temperature so the layers set and slice cleanly.
  9. Beat softened cream cheese in a bowl until smooth. Add powdered sugar, vanilla extract, and milk, then mix until the glaze reaches a smooth, pourable consistency.
  10. Drizzle the glaze over the cooled bars, then lift them out of the pan using the parchment overhang and slice into squares.

Notes

  • Make sure to use fresh strawberries for the best flavor.
  • Adjust the sweetness of the glaze with more or less milk as desired.
