Description
Delicious taco filling served in creamy avocado halves topped with chipotle sauce and ranch dressing.
Ingredients

- 1 lb ground beef (or turkey)
- 1 tsp taco seasoning
- 1 cup black beans (cooked and drained)
- 1 cup corn (cooked)
- 1 cup cherry tomatoes (halved)
- 1 cup cheddar cheese (shredded)
- 2 ripe avocados (halved and pitted)
- 1 cup sour cream
- 2 tbsp chipotle in adobo (minced)
- 1 tbsp lime juice
- 1 cup ranch dressing
- 2 tbsp cilantro (chopped)
- 1 tbsp lime juice
Instructions
- In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
- Add taco seasoning, black beans, and corn. Stir and cook for 5 minutes until heated through.
- Remove from heat and stir in cherry tomatoes and cheddar cheese.
- In a bowl, mix together sour cream, chipotle in adobo, and lime juice to make the chipotle sauce.
- In another bowl, combine ranch dressing, cilantro, and lime juice for the cilantro lime ranch.
- Scoop taco filling into each avocado half.
- Drizzle with chipotle sauce and cilantro lime ranch before serving.
Notes
- For a vegetarian option, replace ground beef with another protein like quinoa or more beans.
- Adjust the level of spice by adding more or less chipotle.
