Description

Delicious taco filling served in creamy avocado halves topped with chipotle sauce and ranch dressing.


Ingredients

  • 1 lb ground beef (or turkey)
  • 1 tsp taco seasoning
  • 1 cup black beans (cooked and drained)
  • 1 cup corn (cooked)
  • 1 cup cherry tomatoes (halved)
  • 1 cup cheddar cheese (shredded)
  • 2 ripe avocados (halved and pitted)
  • 1 cup sour cream
  • 2 tbsp chipotle in adobo (minced)
  • 1 tbsp lime juice
  • 1 cup ranch dressing
  • 2 tbsp cilantro (chopped)
  • 1 tbsp lime juice

Instructions

  1. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  2. Add taco seasoning, black beans, and corn. Stir and cook for 5 minutes until heated through.
  3. Remove from heat and stir in cherry tomatoes and cheddar cheese.
  4. In a bowl, mix together sour cream, chipotle in adobo, and lime juice to make the chipotle sauce.
  5. In another bowl, combine ranch dressing, cilantro, and lime juice for the cilantro lime ranch.
  6. Scoop taco filling into each avocado half.
  7. Drizzle with chipotle sauce and cilantro lime ranch before serving.

Notes

  • For a vegetarian option, replace ground beef with another protein like quinoa or more beans.
  • Adjust the level of spice by adding more or less chipotle.
